Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch or 8×11-inch baking dish with nonstick cooking spray or butter to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is well combined. Add in the thawed hash browns, diced cooked ham, green and red bell peppers, diced onion, and 1 cup of shredded cheddar cheese. Stir everything together until evenly distributed.
  3. Assemble Casserole: Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top for a cheesy, golden finish.
