Ready in just 40 minutes, it’s a comforting dish perfect for a quick weeknight dinner, offering a balanced combination of protein, carbs, and herbs for a satisfying meal.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground turkey
  • 34 medium potatoes, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced

Liquids

  • 1 cup tomato sauce
  • ½ cup water
  • 1 tbsp olive oil

Herbs and Spices

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp onion powder

Instructions

  1. Cook the Ground Turkey: In a large skillet over medium-high heat, cook the ground turkey until browned, breaking it apart with a spatula. Season with salt, pepper, garlic powder, chili powder, and oregano. Remove from skillet and set aside.
  2. Cook the Potatoes: In the same skillet, heat olive oil. Add diced potatoes and cook for 5–10 minutes, stirring occasionally, until browned and starting to soften.
  3. Combine & Season: Return turkey to the skillet. Add tomato sauce, water, minced garlic, oregano, basil, parsley, salt, pepper, and onion powder. Stir well to combine all the ingredients evenly.
  4. Simmer: Cover the skillet and let the mixture simmer for about 5 minutes, or until the potatoes are tender and the flavors have melded together.
  5. Adjust & Serve: Taste the dish and adjust seasonings if needed. Serve warm on its own or over rice or vegetables for a complete meal.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • To make it spicier, add a pinch of chili flakes or cayenne pepper when seasoning the turkey.
  • Using Yukon gold potatoes will give a creamier texture, but russet potatoes work well too.
  • For a lower-carb option, swap potatoes with diced cauliflower.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
