  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium chicken or beef broth
  • 8 lasagna noodles, broken into pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Cheese Mixture:

  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For Garnish:

  • Fresh basil or parsley

Instructions

  1. Prepare the Soup: In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef or sausage and cook until browned. Drain excess grease if needed. Add onion, garlic, oregano, and red pepper flakes. Cook for a few minutes.
  2. Cook the Soup: Stir in tomato paste, crushed tomatoes, broth, salt, and pepper. Bring to a boil. Add lasagna noodles and simmer for 10–12 minutes until noodles are tender.
  3. Make the Cheese Mixture: In a small bowl, combine ricotta, mozzarella, and Parmesan.
  4. Serve: Ladle soup into bowls, top with cheese mixture, and garnish with basil or parsley.

Notes

  • You can use any short pasta in place of lasagna noodles.
  • For a creamy version, add a splash of heavy cream to the soup.
  • Leftovers can be reheated and enjoyed the next day.
