Description

  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth

For the Topping:

  • 4 cups mashed potatoes (about 2 pounds potatoes, cooked and mashed with butter and milk)
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Cook the Meat: Heat olive oil in a large skillet over medium heat. Add the onion and carrots, cook until softened. Stir in garlic, then add the ground beef or lamb. Cook until browned, breaking it apart. Drain excess fat.
  3. Season and Thicken: Add tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Sprinkle with flour, stir to coat. Pour in beef broth, simmer until thickened. Stir in peas and corn.
  4. Assemble and Bake: Spread the meat mixture in a baking dish. Top with mashed potatoes, spreading evenly. Add cheddar cheese if desired. Bake for 20-25 minutes until golden and bubbling. Rest for 5 minutes before serving.
