Ingredients
Scale
Protein
- 1/2 pound boneless, skinless chicken thighs or breasts (thinly sliced)
- 2 soft-boiled eggs (halved)
Noodles & Broth
- 2 packs ramen noodles (discard seasoning packets)
- 4 cups chicken broth
Sauce & Seasoning
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon sriracha
- 2 cloves garlic (minced)
- 1 teaspoon grated ginger
- 1 tablespoon rice vinegar
- 1 teaspoon brown sugar
Vegetables & Garnish
- 1 cup shredded carrots
- 1 cup baby spinach
- 2 green onions (sliced)
- Sesame seeds (for garnish)
- Chili flakes (for garnish, optional)
Instructions
- Cook the Chicken: In a medium pot, heat sesame oil over medium-high heat. Add the thinly sliced chicken and cook until browned and fully cooked through, about 5 to 6 minutes, stirring occasionally to ensure even cooking.
- Add Aromatics: Stir in the minced garlic and grated ginger. Cook for an additional 1 to 2 minutes until fragrant, being careful not to burn the garlic.
- Create the Sauce Base: Add soy sauce, gochujang, sriracha, rice vinegar, and brown sugar to the pot. Stir thoroughly to coat the chicken evenly with the spicy and tangy sauce.
- Simmer with Broth: Pour in the chicken broth and bring the mixture to a gentle simmer. This helps the flavors meld together and creates a rich broth base.
- Add Vegetables: Stir in the shredded carrots and cook for 2 to 3 minutes to slightly soften them while maintaining some crunch.
- Cook the Noodles: Add the ramen noodles to the simmering broth and cook according to package instructions, usually 3 to 4 minutes, until the noodles are tender but still slightly chewy.
- Wilt the Spinach: Stir in the baby spinach and allow it to wilt gently in the hot broth for about 1 minute.
- Adjust Heat and Serve: Taste the broth and adjust spiciness with extra sriracha or chili flakes to your preference. Divide the noodles and broth evenly between two bowls.
- Garnish: Top each bowl with halved soft-boiled eggs, sliced green onions, a sprinkle of sesame seeds, and additional chili flakes if desired. Serve hot.
Notes
- Gochujang adds both heat and depth — adjust the amount to taste based on your spice preference.
- For extra texture and flavor, consider adding mushrooms or corn along with the carrots.
- If you prefer a milder dish, reduce the amounts of sriracha and gochujang by half.
