Beef and Onion Mixture
- 1 tablespoon olive oil
- 1 1/2 pounds beef sirloin or stew meat, cut into bite-sized pieces
- Salt and black pepper to taste
- 1 large yellow onion, thinly sliced
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon all-purpose flour
- 3 cups beef broth
- 1 packet (1 oz) French onion soup mix
Noodles and Toppings
- 8 oz egg noodles
- 1 cup shredded Gruyère or Swiss cheese
- 1 tablespoon fresh thyme leaves (optional)
- Chopped parsley for garnish
Instructions
- Sear the beef: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the beef with salt and black pepper, then sear in batches until browned on all sides. Remove the beef and set aside.
- Caramelize the onions: In the same pan, add butter and sliced onions. Cook over medium heat for 10–15 minutes, stirring often, until onions are soft and caramelized.
- Add garlic and flour: Stir in the minced garlic and cook for 1 minute. Sprinkle the all-purpose flour over the onions and stir for another minute to combine.
- Deglaze and simmer: Add Worcestershire sauce, beef broth, and French onion soup mix, stirring to combine and deglaze the pan. Return the beef to the pan, bring to a simmer, then reduce heat to low. Cover and cook for 25–30 minutes, or until beef is tender.
- Cook noodles: Meanwhile, cook egg noodles according to package instructions until al dente, then drain well.
- Combine noodles and beef mixture: Stir the cooked noodles into the beef and onion mixture until well mixed.
- Add cheese and let melt: Sprinkle shredded Gruyère cheese over the top of the mixture, cover, and let sit for 2–3 minutes until the cheese is melted and gooey.
- Garnish and serve: Garnish with fresh thyme leaves and chopped parsley before serving warm.
