A delicious one-pot meal that combines the flavors of French onion soup with tender chicken and rice, topped with melted cheese for a comforting and satisfying dinner.
Ingredients
Chicken and Marinade:
4 boneless, skinless chicken thighs or breasts
Onion Mixture:
1 tablespoon olive oil, 1 tablespoon butter, 1 large yellow onion (thinly sliced), 2 cloves garlic (minced)
Rice and Seasonings:
1 cup long-grain white rice, 2 cups low-sodium chicken broth, 1/2 cup French onion soup (canned or homemade), 1/2 teaspoon dried thyme, 1/2 teaspoon salt, 1/4 teaspoon black pepper
Toppings:
1 cup shredded Gruyère or Swiss cheese, fresh parsley (chopped, for garnish)
Instructions
- Preheat and Sear: Preheat the oven to 375°F (190°C). Sear seasoned chicken in olive oil until golden. Set aside.
- Caramelize Onions: In the same pan, caramelize onions in butter until golden. Add garlic.
- Add Rice and Liquid: Stir in rice, thyme, broth, and French onion soup. Simmer gently.
- Bake: Nestle chicken back in the pan, cover, and bake for 30–35 minutes.
- Add Cheese: Sprinkle cheese over the top and bake uncovered until melted.
- Garnish and Serve: Garnish with parsley before serving.
Notes
- For a stovetop version, simmer gently on the stove after adding the chicken, covered, until rice and chicken are done.
- Substitute mozzarella for Gruyère if desired.
