- Make the caramelized onions: In a large skillet, heat the butter and olive oil over medium-low heat. Add the thinly sliced onions along with salt and thyme. Cook slowly, stirring often, for 25 to 30 minutes, until the onions are very soft and golden brown. - Make the burger patties: In a mixing bowl, gently combine the ground beef with Worcestershire sauce, salt, and black pepper, taking care not to overwork the meat. Shape into four even patties. Cook the patties in a skillet or on a grill over medium-high heat for about 3 to 4 minutes per side, or until they reach your desired level of doneness. Place a slice of Swiss or Gruyère cheese on each patty during the last minute of cooking and cover to allow the cheese to melt nicely.
- Assemble the burgers: Optionally toast the croissant halves lightly to add texture. Spread Dijon or grainy mustard generously on the bottom half of each croissant.
