Instructions

  1. Prepare the crust: Preheat the oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides. In a medium bowl, mix the crushed frosted animal cookies with melted butter until evenly combined. Press this mixture firmly into the bottom of the prepared pan. Bake for 8–10 minutes, then remove and let cool slightly.
  2. Make the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Add the granulated sugar and continue mixing until fully combined. Stir in the sour cream and vanilla extract. Add the eggs one at a time, mixing on low speed just until combined to avoid overmixing. Gently fold in 1 1/2 cups of crushed frosted animal cookies.
  3. Assemble and bake: Pour the prepared filling over the cooled crust and smooth the surface. Tap the pan lightly on the counter to release any trapped air bubbles. Bake for 50–60 minutes, or until the edges are set and the center is slightly jiggly.
  4. Cool and chill: Once baking is complete, turn off the oven and crack the door open. Let the cheesecake cool inside the oven for 1 hour. Afterward, refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to fully set.
