Cherry Puree:
- 1 1/2 cups pitted cherries (fresh or frozen, thawed)
- 2–3 tbsp cherry syrup or grenadine (optional)
Assembly:
- 2 cups cola (regular or diet), chilled and slightly flattened
- 1/2 cup vanilla ice cream, softened
Instructions
- Prepare Cherry Puree: In a blender, combine cherries and cherry syrup until smooth.
- Assemble Popsicles: Add a small scoop of softened vanilla ice cream to each mold, pressing down gently. Slowly pour in cola, leaving space for expansion.
- Freeze: Insert sticks and freeze for at least 6 hours or until solid.
- Serve: To release, run warm water over the molds and gently remove the pops.
Pour about 1 tablespoon of the cherry mixture into the bottom of each popsicle mold.
Notes
- For a layered look, freeze each component before adding the next.
- Flattened cola helps prevent excessive bubbling and icy texture.
