Main Ingredients:

  • 2 cups ripe mango chunks (fresh or frozen, thawed)
  • 1 1/2 cups plain or vanilla Greek yogurt
  • 34 tbsp honey or maple syrup (adjust to taste)
  • 1 tsp fresh lime juice
  • 1/2 tsp vanilla extract (optional)


Instructions

  1. Blend Ingredients: In a blender, combine mango, Greek yogurt, honey or maple syrup, lime juice, and vanilla extract if using. Blend until smooth and creamy.
  2. Adjust Sweetness: Taste and adjust sweetness if needed.
  3. Fill Molds: Pour the mixture evenly into popsicle molds. Tap molds gently on the counter to remove air bubbles.
  4. Freeze: Insert sticks and freeze for at least 4 hours or until fully solid.
  5. Unmold and Serve: To unmold, run the outside of the molds under warm water for a few seconds, then gently pull out the pops. Serve immediately or store in an airtight container in the freezer for up to 1 month.

Notes

  • For a layered effect, blend half the mango separately and spoon in alternating layers with yogurt mixture before freezing.
  • Coconut milk can replace yogurt for a dairy-free version.
