Ingredients
Scale
Vegetables
- 3 medium zucchini, sliced into 1/2-inch thick rounds
Seasoning & Sauce
- 2 tablespoons unsalted butter, melted
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Toppings
- 2 tablespoons grated Parmesan cheese (optional)
- Chopped fresh parsley for garnish
Instructions
- Preheat the grill: Preheat your grill or grill pan to medium heat to ensure even cooking and a nice char on the zucchini.
- Prepare the garlic butter mixture: In a large bowl, whisk together the melted butter, olive oil, minced garlic, Italian seasoning, salt, and black pepper until well combined.
- Coat the zucchini: Add the zucchini slices to the bowl and toss them thoroughly to ensure each slice is well coated with the garlic butter mixture.
- Thread the zucchini onto skewers: Carefully thread the zucchini rounds onto skewers, slightly overlapping them if necessary to keep them securely in place.
- Grill the skewers: Place the skewers on the preheated grill and cook for 3 to 4 minutes per side, or until the zucchini is tender and has light grill marks, turning carefully to avoid slipping off the skewers.
- Finish and garnish: Remove the skewers from the grill, sprinkle with grated Parmesan cheese if desired, and garnish with chopped fresh parsley before serving warm.
Notes
- If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent them from burning.
- For extra flavor, add a squeeze of fresh lemon juice or a dash of crushed red pepper flakes just before serving.
