Beef Chops

  • 4 Beef chops, bone-in or boneless
  • 3 cloves Garlic, minced
  • 1 tbsp Parsley, fresh, chopped
  • 1 tsp Salt
  • 3/4 tsp Black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp Olive oil
  • 1 tbsp Butter

Scalloped Potatoes

  • 4 large Potatoes, thinly sliced
  • 1 tsp Thyme, dried
  • 1 tsp Thyme, fresh, chopped
  • 2 cups Cheddar cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 cup Heavy cream
  • 1 cup Whole milk
  • 1 clove Garlic, minced


Instructions

  1. Prepare the Beef Chops: Season the beef chops generously with salt, black pepper, Italian seasoning, and minced garlic. Set aside to let the flavors meld while preparing the potatoes.
  2. Cook the Potatoes: Preheat the oven to 375°F (190°C). In a mixing bowl, combine the sliced potatoes with heavy cream, whole milk, minced garlic, dried and fresh thyme, salt, and pepper. Layer half of the potatoes in a buttered baking dish. Sprinkle half of the cheddar and parmesan cheeses over the potatoes. Add the remaining potatoes and top with the rest of the cheese. Dot the top with small pieces of butter.
  3. Bake the Scalloped Potatoes: Place the baking dish in the oven and bake for about 45-55 minutes until the potatoes are tender and the top is golden and bubbly.
  4. Cook the Beef Chops: While the potatoes bake, heat the olive oil and butter in a large skillet over medium-high heat. Add the seasoned beef chops and sear for 4-5 minutes on each side or until desired doneness is reached. Remove from heat and let rest for a few minutes before serving.
