- Black pepper, to taste
- Red pepper flakes, to taste
- Extra virgin olive oil, for coating
Garlic Parmesan Sauce
- 4 large garlic cloves, crushed or minced
- 1/2 cup chopped parsley (optional)
- 1 lemon, zested and juiced
- 1 teaspoon dried oregano
- 1/4 cup extra virgin olive oil
- 1/4 cup grated Parmesan cheese, plus more for serving
Instructions
- Season the shrimp: Pat the shrimp dry with paper towels and season generously with kosher salt, black pepper, and red pepper flakes. Drizzle with extra virgin olive oil and toss to coat evenly.
- Make the sauce: In a large bowl, whisk together the crushed garlic, chopped parsley if using, lemon zest and juice, 1/4 cup olive oil, and dried oregano. Season the mixture lightly with salt, pepper, and additional red pepper flakes to your taste preference.
- Grill the shrimp: Preheat a grill or indoor griddle to medium-high heat and lightly oil the grates to prevent sticking. Grill the shrimp on each side until they turn pink and opaque, about 5 minutes total depending on their size.
- Finish and serve: Remove the shrimp immediately from the heat and toss them in the prepared garlic and herb olive oil mixture. Add the grated Parmesan cheese and toss thoroughly to coat. Transfer the shrimp to a serving plate and serve immediately for best flavor.
