Potato Salad:

  • 2 pounds red potatoes
  • 6 slices bacon, chopped
  • 1/2 cup yellow onion, finely diced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth (or water)
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Cook Potatoes: Place the potatoes in a large pot, cover with cold water, boil, then simmer until fork-tender.
  2. Cook Bacon: In a skillet, cook chopped bacon until crispy. Remove and set aside.
  3. Sauté Onion: In the same skillet, sauté diced onion until soft.
  4. Make Dressing: Add vinegar, Dijon mustard, sugar, salt, pepper, and chicken broth to the skillet. Simmer for 2 minutes.
  5. Combine: Stir in potato chunks and bacon. Toss to coat.
  6. Rest and Garnish: Let the salad sit for 10–15 minutes. Garnish with parsley before serving.
