Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla, then stir in the mashed banana.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes until edges are golden and tops are set.
- Cool and glaze: Let cookies cool for 5 minutes on the pan, then transfer to a wire rack to cool completely. For the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cookies and let set before serving.
