Gnocchi:
- 1 pound store-bought or homemade gnocchi
- 1 tablespoon olive oil
Caprese Salad:
- 1 1/2 cups cherry tomatoes, halved
- 1 cup fresh mozzarella pearls or diced mozzarella
- 1/4 cup fresh basil leaves, torn or chopped
- 2 tablespoons balsamic glaze
- Salt and black pepper to taste
Instructions
- Cook the Gnocchi: Bring a pot of salted water to a boil. Cook the gnocchi according to package instructions until they float to the top, about 2–3 minutes. Drain and rinse under cold water.
- Prepare the Salad: In a large bowl, combine the cooled gnocchi, cherry tomatoes, mozzarella, and basil. Season with salt and pepper.
- Finish and Serve: Drizzle the salad with balsamic glaze just before serving. Toss gently to coat. Serve chilled or at room temperature.
Notes
- For extra flavor, lightly pan-fry the cooked gnocchi in a bit of olive oil until golden before tossing with the salad.
- Add arugula or avocado for a fresh twist.
