Ingredients
Scale
Crust
- 1 box yellow cake mix (15.25 oz)
- 1/2 cup unsalted butter, melted
- 1 large egg
Cream Cheese Topping
- 8 oz cream cheese, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 cups powdered sugar (approximately 1 lb)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
- Make Crust: In a mixing bowl, combine the yellow cake mix, melted butter, and one egg until a soft dough forms. Press this dough evenly into the bottom of the prepared pan to create the crust.
- Prepare Cream Cheese Mixture: Beat the softened cream cheese until smooth and creamy. Add the two eggs and vanilla extract, mixing well to combine. Gradually blend in the powdered sugar until the mixture is creamy and smooth.
- Assemble Bars: Spread the cream cheese mixture evenly over the cake crust in the pan, smoothing the top.
- Bake: Bake in the preheated oven for 40-45 minutes, or until the edges turn golden brown and the center is set but still gooey.
- Cool and Serve: Allow the bars to cool completely in the pan before slicing into 16 equal pieces for serving.
Notes
- Make sure the cream cheese is fully softened to avoid lumps in the topping.
- The bars should be gooey in the center; do not overbake to maintain the texture.
- Use parchment paper for easier removal and cleanup.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- For a festive twist, top with fresh berries or a dusting of powdered sugar before serving.
