Description

This Greek Shrimp with Feta and Tomatoes recipe offers a delightful Mediterranean dish combining succulent shrimp baked in a rich tomato sauce with garlic, onion, and oregano, topped with tangy crumbled feta cheese. Perfectly seasoned and baked to tender perfection, it’s a flavorful and healthy main course that’s easy to prepare and ideal for a quick weeknight dinner or a special meal.

Ingredients

Scale

Seafood

  • 1 lb large shrimp, peeled and deveined

Vegetables & Aromatics

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juices

Spices & Herbs

  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons chopped fresh parsley or dill

Other

  • 2 tablespoons olive oil
  • 1/3 cup crumbled feta cheese
  • Juice of 1/2 lemon

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to get it ready for baking the shrimp dish.
  2. Sauté onions: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and cook for 3 to 4 minutes until softened and translucent.
  3. Add garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, making sure not to burn it.
  4. Prepare tomato sauce: Pour in the diced tomatoes with their juices along with red pepper flakes (if using), dried oregano, and season with salt and black pepper to taste. Let the sauce simmer for 5 to 6 minutes to allow the flavors to meld and the sauce to thicken slightly.
  5. Add the shrimp: Nestle the peeled and deveined shrimp evenly into the sauce in a single layer, ensuring they are mostly covered by the tomato mixture.
  6. Add feta cheese: Sprinkle the crumbled feta cheese evenly over the top of the shrimp and sauce.
  7. Bake in oven: Transfer the skillet to the preheated oven and bake for 10 to 12 minutes until the shrimp turn pink and are cooked through.
  8. Finish and garnish: Remove the skillet from the oven, squeeze the juice of half a lemon over the dish, and garnish with the fresh chopped parsley or dill for a bright, fresh flavor.
  9. Serve: Serve the Greek shrimp warm with crusty bread, or over rice or orzo to soak up the delicious tomato sauce.

Notes

  • For a stovetop-only version, cover the skillet and simmer the shrimp in the sauce for 5 to 6 minutes instead of baking.
  • Add sliced olives or baby spinach for added flavor and nutrition variations.
  • Ensure shrimp are not overcooked – they should be pink and opaque inside for the best texture.
  • Use fresh herbs like dill or parsley to brighten the dish just before serving.
  • This dish pairs wonderfully with a side of crusty bread for dipping into the sauce or a light green salad.
