A flavorful and healthy dinner featuring juicy grilled lemon garlic chicken breasts paired with tender roasted broccoli. This recipe combines a zesty marinade and simple roasting technique for a quick, satisfying meal perfect for any occasion.
Ingredients
Scale
For the chicken:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the broccoli:
- 1 large head of broccoli, cut into florets
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: fresh lemon wedges for serving
Instructions
- Marinate the chicken: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, up to 4 hours, to soak in the flavors.
- Roast the broccoli: Preheat your oven to 425°F (220°C). Toss the broccoli florets with olive oil, garlic powder, salt, and pepper until evenly coated. Spread the florets out on a baking sheet in a single layer. Roast in the oven for 20 to 25 minutes, flipping or tossing halfway through, until the broccoli is tender and edges are slightly crispy.
- Grill the chicken: While broccoli roasts, preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and place on the hot grill. Cook for 5 to 7 minutes on each side, or until the internal temperature reaches 165°F and juices run clear. Remove the chicken and let it rest for 5 minutes before slicing.
- Serve: Plate the grilled lemon garlic chicken alongside the roasted broccoli. Garnish with fresh lemon wedges if desired for an extra burst of citrus flavor.
Notes
- You can substitute chicken thighs for breasts if you prefer darker meat.
- Add red pepper flakes to the broccoli for a spicy kick.
- Sprinkle freshly grated Parmesan over the roasted broccoli before serving for added flavor.
