Instructions
- Heat the oil and brown beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink, about 5–6 minutes. Drain excess fat if needed.
- Sauté onion and garlic: Add the diced onion and minced garlic to the skillet with the beef and sauté for 2–3 minutes until fragrant and soft.
- Add potatoes and spices: Stir in the diced potatoes, smoked paprika, dried oregano, salt, and black pepper, mixing well to coat.
- Simmer with beef broth: Pour in the beef broth or water. Cover the skillet with a lid and reduce heat to medium. Cook for 15–20 minutes, stirring occasionally, until the potatoes are tender and the liquid is mostly absorbed.
- Add cheese and melt: If using, sprinkle shredded cheddar cheese evenly over the top of the mixture. Cover again and let the cheese melt for 2–3 minutes.
- Garnish and serve: Remove from heat and garnish with chopped parsley or green onions before serving hot.
