Instructions
- Cook Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened. Stir in garlic.
- Brown Beef: Add ground beef to the skillet, breaking it apart with a spoon as it cooks. Drain excess fat if needed.
- Add Potatoes and Spices: Mix in diced potatoes, paprika, cumin, oregano, salt, and pepper. Stir in tomato paste and pour in beef broth.
- Simmer: Cover the skillet and simmer on low heat for 15–20 minutes until potatoes are tender. Uncover and cook for 3–5 minutes to evaporate excess liquid.
