Description

Ground Turkey:

  • 1 tablespoon olive oil
  • 1 pound ground turkey

Vegetables:

  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced

Other:

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley or cilantro (optional)


Instructions

  1. Heat the skillet: Heat olive oil in a large skillet over medium heat.
  2. Cook the turkey: Add ground turkey to the skillet and cook until no longer pink.
  3. Sauté vegetables: Add onion and garlic, sauté until fragrant. Stir in zucchini and cook until tender.
  4. Add remaining ingredients: Add chickpeas, diced tomatoes, spices, salt, and pepper. Simmer covered for 8-10 minutes.
  5. Garnish and serve: Remove from heat, garnish with parsley or cilantro, and serve warm.
