Ingredients
Scale
Bread and Butter
- 8 slices artisan bread (like sourdough or multigrain)
- 4 tbsp butter, softened
Cheese
- 4 oz sharp white cheddar cheese, shredded
- 4 oz fontina or gruyère cheese, shredded
Fillings
- 1/2 red onion, thinly sliced and caramelized
- 1/2 cup fresh baby spinach or arugula
- 2 tsp Dijon mustard (optional)
- 4 slices cooked bacon or prosciutto (optional)
Instructions
- Prepare the bread: Spread a thin layer of softened butter on one side of each slice of artisan bread. Ensure the butter covers the surface evenly to help achieve a golden, crispy exterior when cooking.
- Assemble the sandwich: On the unbuttered side of 4 slices, layer an even mix of the shredded sharp white cheddar and fontina or gruyère cheeses. Add the caramelized red onion, fresh baby spinach or arugula, and bacon or prosciutto if using. Optionally, spread Dijon mustard on the unbuttered side of the remaining 4 bread slices and place them on top of the fillings, buttered side facing outward to the skillet.
- Grill the sandwiches: Heat a large skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3 to 4 minutes per side. Use a spatula to press slightly on each sandwich to help meld the layers and encourage even browning. Cook until the bread is golden brown and the cheese is completely melted.
- Serve: Remove the sandwiches from the skillet, slice them diagonally or in halves, and serve hot to enjoy the melty cheese and flavorful fillings at their best.
Notes
- Experiment with different cheese varieties like brie, gouda, or smoked provolone to create unique flavor profiles.
- Add fresh sliced tomato or roasted red peppers for added vegetable nutrition and flavor.
- Pair with a warm bowl of tomato soup or a crisp side salad for a well-rounded meal.
