  • 8 ounces cremini or button mushrooms, finely chopped
  • 2 cloves garlic, minced

  • 2 cups fresh spinach, chopped
  • 1/2 cup part-skim mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Toothpicks or kitchen twine for securing


Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C).
  2. Cook the Stuffing: In a skillet, heat 1 tablespoon olive oil. Cook mushrooms and onion until softened. Add garlic, spinach, cheeses, thyme, salt, and pepper. Stir well.
  3. Prepare the Chicken: Cut a pocket in each chicken breast. Stuff with the mushroom mixture and secure with toothpicks or twine. Season the outside with paprika, salt, and pepper.
  4. Sear and Bake: Sear chicken in olive oil until golden. Transfer skillet to oven and bake for 18–20 minutes until cooked through.
  5. Rest and Serve: Let the chicken rest for 5 minutes before serving.
