Instructions
- Prepare Lobster Tails: Using kitchen shears, cut the top of each lobster shell lengthwise and gently pull the meat partially out, resting it on top of the shell.
- Infuse Butter: In a large skillet or saucepan over low heat, combine butter and water, whisking until emulsified. Add garlic, thyme, parsley, tarragon, and lemon zest; let steep for 3–4 minutes to infuse flavors.
- Poach Lobster Tails: Place lobster tails meat-side down in the butter mixture and poach gently, maintaining a temperature of about 160–180°F (do not boil), for 6–8 minutes or until lobster meat is opaque and tender.
- Season and Serve: Season lightly with salt and pepper. Serve lobster tails drizzled with the herb butter and lemon wedges on the side.

- For a richer flavor, add a splash of white wine to the butter mixture before poaching.
