Dry Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup buttermilk
- 1 large egg
- 1/4 cup unsalted butter, melted
- 2 tablespoons honey
Optional Add-Ins:
- 1/2 cup shredded cheddar cheese
- 1 jalapeño, finely diced
- Oil for frying or mini muffin tin for baking
Instructions
- Prepare the Batter: In a large bowl, mix dry ingredients. In a separate bowl, combine wet ingredients. Fold wet ingredients into dry until just combined. Add optional cheese and jalapeño.
- To Fry: Heat oil to 350°F. Fry spoonfuls of batter until golden brown and cooked through. Drain on paper towels.
- To Bake: Preheat oven to 400°F. Fill greased mini muffin tin and bake for 10–12 minutes.
- Serve: Enjoy warm with honey butter or as a side dish.
