Description

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar

  • 1/2 teaspoon baking soda

Wet Ingredients:

  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey

Optional Add-Ins:

  • 1/2 cup shredded cheddar cheese
  • 1 jalapeño, finely diced

Instructions

  1. Prepare the Batter: In a large bowl, mix dry ingredients. In a separate bowl, combine wet ingredients. Fold wet ingredients into dry until just combined. Add optional cheese and jalapeño.
  2. To Fry: Heat oil to 350°F. Fry spoonfuls of batter until golden brown and cooked through. Drain on paper towels.
