For the Marinade:
- 4 pounds bone-in chicken thighs or drumsticks
- ½ cup ketchup
- ½ cup soy sauce
- ½ cup brown sugar
- ⅓ cup pineapple juice
- ¼ cup rice vinegar (or apple cider vinegar)
- 2 tablespoons fresh ginger, grated
- 4 cloves garlic, minced
- 2 tablespoons sesame oil
- 1 teaspoon smoked paprika (optional)
For Garnish:

Instructions
- Prepare the Marinade: In a medium bowl, whisk together ketchup, soy sauce, brown sugar, pineapple juice, vinegar, ginger, garlic, sesame oil, and paprika if using. Reserve ½ cup of the marinade for basting.
- Marinate the Chicken: Place chicken in a large resealable bag or shallow dish and pour in the remaining marinade. Cover and refrigerate for at least 4 hours or overnight for best flavor.
- Grill the Chicken: Preheat grill to medium heat. Remove chicken from marinade and grill, turning and basting with the reserved marinade every few minutes, until cooked through and caramelized, about 30–40 minutes (internal temperature should reach 165°F/74°C).
- Serve: Transfer to a platter, garnish with green onions and sesame seeds, and serve hot.
Notes
- If you don’t have a grill, bake the chicken at 400°F (200°C) for 40–45 minutes, basting with marinade halfway through. Serve with steamed rice and grilled pineapple for a traditional Hawaiian-style meal.
