Description

Wet Ingredients:

  • 2 large eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 medium)
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup chopped pecans (optional)

For the Cinnamon Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • 4 tablespoons unsalted butter (softened)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Prepare the batter: Whisk together dry ingredients. In a separate bowl, combine wet ingredients and mix well. Fold in pecans. Pour into loaf pan.
  3. Bake: Bake for 55–65 minutes until a toothpick comes out clean. Cool on a wire rack.
  4. Make the frosting: Beat cream cheese and butter until smooth. Add vanilla, cinnamon, and powdered sugar. Spread frosting over cooled bread.

Notes
