Wet Ingredients:
- 2 large eggs
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups mashed ripe bananas (about 3 medium)
- 1/2 cup crushed pineapple (drained)
- 1/2 cup chopped pecans (optional)
For the Cinnamon Cream Cheese Frosting:
- 8 oz cream cheese (softened)
- 4 tablespoons unsalted butter (softened)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 cups powdered sugar
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Prepare the batter: Whisk together dry ingredients. In a separate bowl, combine wet ingredients and mix well. Fold in pecans. Pour into loaf pan.
- Bake: Bake for 55–65 minutes until a toothpick comes out clean. Cool on a wire rack.
- Make the frosting: Beat cream cheese and butter until smooth. Add vanilla, cinnamon, and powdered sugar. Spread frosting over cooled bread.
Notes
- You can make muffins by adjusting bake time. Store leftovers covered in the fridge. Toasted pecans make a great addition.
