Description

This Italian Basil Chicken recipe is a flavorful and easy dish that combines tender chicken pieces with fragrant basil, sweet cherry tomatoes, and savory sun-dried tomatoes in a delicious sauce. Perfect for a quick and satisfying Italian-inspired meal.

Ingredients

Scale

For the Italian Basil Chicken:

  • pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup chicken broth
  • ⅓ cup fresh basil leaves, torn or chopped
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil: Heat olive oil in a large skillet over medium heat.
  2. Sauté garlic and onion: Add garlic and onion, sauté for 2–3 minutes until fragrant and softened.
  3. Cook chicken: Add chicken pieces and cook for 5–7 minutes, until browned.
  4. Add tomatoes: Stir in cherry tomatoes and sun-dried tomatoes, cook for 2 minutes.
  5. Simmer: Pour in chicken broth, season, and simmer for 5–7 minutes.
  6. Add basil: Stir in fresh basil and cook for 1 minute.
  7. Finish and serve: Remove from heat, sprinkle with Parmesan, and serve warm with preferred sides.

Notes

  • You can substitute boneless chicken thighs for added richness.
  • For a creamy variation, stir in a splash of heavy cream or cream cheese before adding the basil.
