  • 2 fresh peaches, sliced
  • 12 jalapeños, thinly sliced (seeds removed for less heat)
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme


Instructions

  1. Season the chicken: Pat the chicken breasts dry and season evenly with salt, black pepper, garlic powder, and smoked paprika to build a flavorful base.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4–5 minutes per side until golden brown and nearly cooked through.
  3. Add peaches and jalapeños: Reduce heat to medium, then add the sliced peaches and jalapeños to the skillet around the chicken.
  4. Prepare the sauce: In a small bowl, whisk together honey, apple cider vinegar, Dijon mustard, and thyme until well combined.
  5. Simmer with sauce: Pour the sauce mixture over the chicken, peaches, and jalapeños. Let everything simmer for 5–7 minutes, occasionally spooning the sauce over the chicken to ensure it is fully cooked and the sauce slightly thickens.
  6. Rest and serve: Remove the skillet from heat and let the chicken rest for a few minutes before serving to allow flavors to meld and juices to redistribute.
