Description

A colorful and refreshing Jello Rainbow Sherbet Ice Cream that combines vibrant layers of flavored Jello with creamy sherbet and light whipped topping for a delightful frozen dessert perfect for warm days and parties.

Ingredients

Scale

Jello Layers

  • 1 cup boiling water (per Jello flavor)
  • 1 (3 oz) box Jello mix, assorted favorite flavors
  • 1 cup cold water (per Jello flavor)

Ice Cream Base

  • 2 cups sherbet (store-bought or homemade, softened)
  • 1 cup light whipped topping

Instructions

  1. Dissolve Jello Mix: In a medium bowl, dissolve each 3 oz box of Jello mix into 1 cup of boiling water, stirring thoroughly until fully blended.
  2. Cool Jello Mixture: Stir in 1 cup of cold water for each Jello flavor to cool the mixture and prepare for setting.
  3. Set Jello Layers: Layer the different flavored Jello mixtures into a shallow dish or ice cube tray, then refrigerate for about 4 hours until firm and fully set.
  4. Combine Ice Cream Ingredients: Cut each Jello layer into cubes, then combine the cubes with softened sherbet and light whipped topping in a mixing bowl. Stir gently until the mixture is smooth and well-blended.
  5. Freeze to Solidify: Transfer the blended mixture to an airtight container and freeze for at least 2 hours or until fully solidified and scoopable.

Notes

  • For best results, use different colored and flavored Jello to create a vibrant rainbow effect.
  • Allow sherbet to soften before mixing to achieve a smooth consistency.
  • This dessert can be made ahead of time and stored in the freezer for up to 1 week.
  • Serve scoops with fresh fruit or a drizzle of fruit syrup for extra flavor and presentation.
