Cheese Dough:
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
Dry Ingredients:
- 1 ½ cups almond flour
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
Additional Ingredients:
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- ¼ cup grated Parmesan cheese
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Melt Cheese: In a microwave-safe bowl, combine mozzarella and cream cheese. Microwave in 30-second intervals, stirring until smooth and melted.
- Prepare Dough: In another bowl, whisk together almond flour, baking powder, garlic powder, and salt. Add the melted cheese mixture and eggs to the dry ingredients. Mix until a dough forms (it may be sticky; knead with damp hands if needed).
- Shape Rolls: Divide dough into 10 equal portions and shape into rolls. Place on the prepared baking sheet.
- Make Garlic Butter: In a small bowl, combine melted butter, minced garlic, parsley, and Parmesan cheese. Brush half of this mixture over the rolls.
- Bake: Bake for 15–18 minutes, or until golden brown.
- Finish: Brush with the remaining garlic butter mixture before serving warm.
