  • 1 lb ground beef
  • 1/3 cup panko breadcrumbs
  • 1 egg
  • 3 cloves garlic (minced)
  • 2 green onions (finely chopped)
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon gochujang (Korean chili paste)
  • 1/4 teaspoon black pepper
  • sesame seeds and extra green onions (for garnish)

For the Spicy Mayo Dip:

  • 1/2 cup mayonnaise
  • 1 tablespoon gochujang
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey


Instructions

  1. Preheat the oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare the meatballs: In a large bowl, mix together ground beef, panko breadcrumbs, egg, garlic, green onions, ginger, soy sauce, sesame oil, brown sugar, gochujang, and black pepper. Form into 1-inch meatballs and place on the baking sheet.
  3. Bake: Bake for 15–18 minutes until cooked through and browned.
  4. Make the dip: Mix mayonnaise, gochujang, rice vinegar, and honey in a bowl.
  5. Serve: Garnish meatballs with sesame seeds and green onions. Serve hot with the spicy mayo dip.
