Description

This Lemon Blueberry Baked Oatmeal is a wholesome, delicious breakfast option that combines the tangy brightness of lemon with the sweet burst of fresh blueberries. Made with rolled oats, chia seeds, and natural sweeteners like maple syrup and applesauce, this baked oatmeal is a healthy, comforting, and easy-to-make dish perfect for mornings or brunch.

Ingredients

Scale

Dry Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup unsweetened almond milk (or any plant-based milk)
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Juice of 1 lemon

Fruit

  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish and set aside to prevent sticking.
  2. Mix dry ingredients: In a large bowl, combine the rolled oats, chia seeds, baking powder, ground cinnamon, and salt. Stir well to evenly distribute all the dry ingredients.
  3. Add wet ingredients: Pour in the almond milk, pure maple syrup, unsweetened applesauce, vanilla extract, lemon zest, and lemon juice into the bowl with the dry ingredients. Stir thoroughly until the mixture is fully combined and smooth.
  4. Incorporate blueberries: Gently fold in the fresh or frozen blueberries so they are evenly dispersed throughout the oatmeal mixture without bursting.
  5. Transfer to baking dish: Pour the combined mixture into the prepared 8×8-inch baking dish. Use a spatula to spread it out evenly for uniform baking.
  6. Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top becomes golden brown and the oatmeal is fully set in the center.
  7. Cool and serve: Remove from oven and let the baked oatmeal cool slightly before serving. Enjoy it warm, optionally topped with extra blueberries or a drizzle of maple syrup for added sweetness.

Notes

  • You can use fresh or frozen blueberries; if using frozen, do not thaw before mixing.
  • Feel free to substitute the almond milk with any plant-based milk or regular milk as preferred.
  • For a nuttier flavor or added texture, sprinkle chopped nuts on top before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days and reheat before serving.
  • This recipe is easily doubled to serve more people by using a larger baking dish.
