  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup chopped pecans (optional)

Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip), thawed

Lemon Layer:

  • 2 (3.4 oz) boxes instant lemon pudding mix
  • 2 1/2 cups cold milk

Topping:

  • 1 1/2 cups whipped topping
  • lemon zest or thin lemon slices for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Mix flour, softened butter, and pecans (if using) to form a crumbly dough. Press into a 9×13-inch baking dish and bake for 15–18 minutes until lightly golden. Cool crust.
  2. In a large bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over cooled crust.
  3. Whisk lemon pudding mix and cold milk for 2 minutes until thickened. Spread over cream cheese layer. Top with remaining whipped topping.
