 - 1 ½ cups granulated sugar (plus extra for rolling)
 - 1 large egg
 - 2 tablespoons fresh lemon juice
 - 1 tablespoon lemon zest
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
 - Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
 - Cream butter and sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
 - Add wet ingredients: Add the egg, lemon juice, lemon zest, and vanilla extract, mixing until combined.
 - Combine and form dough: Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
 - Roll and bake: Scoop tablespoon-sized amounts of dough, roll into balls, coat each ball in extra sugar, place on baking sheets, and bake for 9–11 minutes until golden.
 - Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
