Description

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar until light and fluffy, about 2–3 minutes.
  4. Add Wet Ingredients: Add the egg, lemon juice, lemon zest, and vanilla extract, and mix until well combined.
  5. Combine and Form Dough: Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms. Scoop the dough into balls and roll them in granulated sugar.
  6. Bake: Place the dough balls on the baking sheets, flatten them, and bake for 9–11 minutes until set.
