  • Potatoes:

  • 3 cups russet potatoes (peeled and diced)
  • Seasoning:

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Additional:

  • 1½ cups shredded cheddar cheese
  • ½ cup cooked and crumbled bacon
  • ½ cup sour cream
  • 2 green onions (sliced)
  • Chopped parsley for garnish (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Prepare the potatoes: In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread the seasoned potatoes in the baking dish and bake for 25 minutes.
  3. Cook the chicken: Season the chicken with salt and pepper. After 25 minutes, remove the dish from the oven and layer the chicken over the potatoes. Bake for another 20–25 minutes until the chicken is cooked through.
