  • 1/4 cup chopped mushrooms

Protein:

Optional:

  • 1/4 avocado sliced
  • fresh chives or parsley for garnish


Instructions

  1. Prepare Egg Mixture: In a small bowl, whisk together the eggs, milk (or water), salt, and pepper until light and fluffy.
  2. Sauté Vegetables: Heat butter or oil in a nonstick skillet over medium heat. Add the bell pepper, onion, and mushrooms, and sauté until softened.
  3. Cook Eggs: Pour the egg mixture into the pan and cook undisturbed for 30 seconds. Gently push the eggs towards the center with a spatula. Add cooked vegetables, sausage or bacon, and cheese on one half of the omelette. Fold the other half over the filling and cook until cheese is melted.
  4. Finish and Serve: Slide omelette onto a plate, top with sliced avocado and herbs if desired. Serve warm.
