Description

This Loaded Chicken Casserole is a creamy, cheesy, and comforting dish perfect for a family dinner. Packed with chicken, hash browns, bacon, and green onions, it’s a satisfying and delicious meal.

Ingredients

Scale

For the casserole:

  • 3 cups cooked chicken breast, shredded or cubed
  • 4 cups frozen hash brown potatoes, thawed
  • 1 cup sour cream
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 1/2 cups shredded cheddar cheese, divided
  • 6 slices cooked bacon, chopped
  • 1/2 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

For the topping (optional):

  • 1/2 cup crushed Ritz crackers or buttered breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven: Preheat oven to 375°F (190°C).
  2. Mix the casserole: In a large bowl, combine chicken, hash browns, sour cream, cream of chicken soup, 1 1/2 cups cheddar cheese, bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Prepare for baking: Transfer the mixture to a greased 9×13-inch baking dish, spread evenly. Add the cracker topping if desired by mixing the crushed crackers with melted butter and sprinkling over the top. Top with remaining cheddar cheese.
  4. Bake: Bake for 30–35 minutes until hot and bubbly.
  5. Serve: Let it sit for 5–10 minutes before serving.

Notes

  • You can use rotisserie chicken for convenience.
  • Add steamed broccoli or sautéed mushrooms for extra veggies.
