Ingredients
Scale
Chicken and Vegetables
- 2 cups cooked chopped chicken
- 1/2 (9-oz) package frozen spinach, thawed and well drained
Dairy and Eggs
- 1 cup shredded Monterey Jack cheese
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup refrigerated sour cream French Onion Dip
Spices
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- Salt and pepper, to taste
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Lightly spray an 8×8-inch or 11×7-inch baking pan with cooking spray to prevent sticking.
- Layer Chicken and Spinach: Spread the cooked chopped chicken evenly across the bottom of the prepared pan. Follow by adding the thawed and drained spinach on top of the chicken, distributing it evenly. Then, sprinkle the shredded Monterey Jack cheese over the spinach layer.
- Mix Egg Mixture: In a mixing bowl, whisk together the 4 large eggs, heavy cream, refrigerated sour cream French Onion Dip, onion powder, garlic powder, salt, and pepper until fully combined and smooth. This mixture will bind the casserole ingredients together and add a creamy texture.
- Pour and Bake: Pour the egg and cream mixture evenly over the layered chicken, spinach, and cheese in the baking pan. Bake the casserole uncovered in the preheated oven for 30 to 35 minutes, or until the mixture is set and the top is lightly golden.
Notes
- Ensure the frozen spinach is properly thawed and squeezed dry to avoid excess moisture making the casserole soggy.
- For a sharper cheese flavor, consider mixing in some cheddar cheese with the Monterey Jack.
- This casserole can be made ahead and refrigerated before baking; just add extra baking time if baking directly from cold.
- Feel free to add chopped mushrooms or diced bell peppers for additional vegetables and flavor.
- Use fresh herbs like parsley or chives sprinkled on top after baking for extra freshness.
