Description

  • 1 ¾ cups powdered sugar
  • 3 large egg whites, at room temperature
  • ¼ cup granulated sugar
  • ¼ teaspoon cream of tartar

For the filling:

  • 4 oz goat cheese, softened
  • 2 oz cream cheese, softened
  • 2 tablespoons honey
  • ¼ teaspoon black pepper

For the walnut crunch:

  • ½ cup walnuts, finely chopped
  • 2 tablespoons sugar
  • 1 tablespoon butter
  • pinch of salt

Instructions

  1. Preheat and prepare: Preheat oven to 300°F (150°C) and line two baking sheets. Pulse almond flour and powdered sugar, sift into a bowl.
  2. Make macaron shells: Beat egg whites, add sugar and cream of tartar, then fold in almond flour; pipe rounds and let rest.
  3. Bake: Bake shells until set, then cool.
  4. Prepare walnut crunch: Caramelize sugar and butter, coat walnuts, cool, and chop finely.
  5. Make filling: Beat cheeses, honey, and pepper until smooth, fold in walnut crunch.
  6. Assemble: Pipe filling onto shells, sandwich together.
