Instructions
- Boil Potatoes: Place the peeled and chunked potatoes in a large pot and cover with cold salted water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, about 15 to 20 minutes.
- Prepare Brown Butter: While the potatoes cook, melt the butter in a small saucepan over medium heat, swirling the pan occasionally. Continue cooking the butter until it turns golden brown and emits a nutty aroma, approximately 5 to 7 minutes. Remove the pan from heat and set aside.
- Drain and Whip Potatoes: Drain the cooked potatoes thoroughly and return them to the hot pot or transfer to a large bowl. Using a hand mixer or stand mixer, whip the potatoes until they become smooth and fluffy.
- Incorporate Dairy and Butter: Slowly pour in the warm milk and heavy cream while continuing to whip the potatoes for a creamy texture. Then gradually add the browned butter, being careful to leave behind any dark browned solids if preferred. Mix thoroughly until fully combined.
- Add Cheese and Seasoning: Stir in the finely grated Manchego cheese, salt, and black pepper. Taste and adjust the seasoning if necessary to balance flavors.
- Serve: Serve the whipped potatoes warm, optionally topped with chopped chives or parsley for a fresh garnish.
