Shrimp:

  • 1 1/2 pounds large shrimp, peeled and deveined (tails on or off)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Mango Jalapeño BBQ Sauce:

  • 1 ripe mango, peeled and diced
  • 1 jalapeño, seeded and chopped
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • pinch of salt


Instructions

  1. Mango Jalapeño BBQ Sauce: To make the sauce, blend mango, jalapeño, ketchup, vinegar, honey, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, and salt. Simmer in a saucepan until thickened.
  2. Grilling Shrimp: Preheat grill. Toss shrimp with oil, salt, and pepper. Grill for 2–3 minutes per side. Brush with mango jalapeño BBQ sauce during the last minute.
  3. Serve immediately with extra sauce on the side.

Notes

  • You can adjust the heat level by using more or less jalapeño.
  • This dish can also be broiled or sautéed.
