Ingredients
Scale
Chicken & Filling
- 4 boneless, skinless chicken breasts
- 4 oz brie cheese, sliced
- 1 apple, thinly sliced (Honeycrisp or Granny Smith)
- Salt and pepper, to taste
Glaze & Cooking
- 2 tbsp olive oil
- 1/4 cup pure maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- Fresh thyme sprigs, for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken.
- Prepare Chicken Pockets: Carefully cut a pocket into each chicken breast, then season both the inside and outside with salt and pepper to enhance flavor.
- Stuff Chicken: Fill each pocket with slices of brie cheese and apple. Use toothpicks if needed to secure the filling inside.
- Sear Chicken: Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken breasts for about 3 minutes on each side until they develop a golden brown crust.
- Make Glaze: In a small bowl, whisk together maple syrup, Dijon mustard, and apple cider vinegar until smooth.
- Glaze & Bake: Pour the glaze evenly over the seared chicken breasts. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked through and the glaze is caramelized.
- Rest & Garnish: Let the chicken rest for a few minutes after baking. Garnish with fresh thyme sprigs before serving warm.
Notes
- Choose firm apples like Honeycrisp or Granny Smith to maintain texture during baking.
- Make sure to secure the stuffing with toothpicks to prevent it from spilling out during cooking.
- Use an oven-safe skillet that can go from stovetop to oven for easy preparation and cleanup.
- Allow the chicken to rest to retain juiciness and let the glaze set beautifully.
- For a dairy-free option, substitute brie with a plant-based cheese alternative.
