Description

Chicken:

  • 1 pound boneless, skinless chicken breasts (halved lengthwise)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Sauce:

  • 3 cloves garlic (minced)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (drained and chopped)
  • ½ teaspoon red pepper flakes (optional)

Additional:

  • 8 ounces pasta (such as penne or fettuccine)
  • 2 tablespoons chopped fresh basil or parsley (for garnish)

Instructions

  1. Cook the Pasta: Cook pasta in salted water until al dente. Drain and set aside.
  2. Cook the Chicken: Season chicken with salt, pepper, garlic powder, and Italian seasoning. Cook in olive oil until golden brown and cooked through. Set aside.
  3. Make the Sauce: In the same skillet, sauté garlic, add chicken broth, then stir in cream, Parmesan, sun-dried tomatoes, and red pepper flakes. Simmer until thickened.
  4. Combine: Slice chicken, add it back to the skillet with cooked pasta. Toss to coat in the sauce.
  5. Serve: Garnish with basil or parsley and serve warm.

Notes

  • For extra flavor, use sun-dried tomatoes packed in oil and add a bit of the oil to the sauce.
  • You can substitute half-and-half for a lighter version.
