Description

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)

  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (chopped, oil-packed and drained)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped baby spinach
  • 1 tablespoon fresh basil or parsley (chopped, for garnish)


Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil.
  2. Cook onion and garlic: Cook diced onion for 3–4 minutes until softened. Add garlic and red pepper flakes, cook for 30 seconds.
  3. Cook chicken: Add chicken and chicken broth. Simmer, cover, and cook for 15–20 minutes. Remove, shred or chop chicken, and return to the pot.
  4. Add cream and seasonings: Stir in heavy cream, sun-dried tomatoes, Parmesan cheese, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
  5. Add spinach and garnish: Add spinach, cook for 2 minutes. Adjust seasoning, garnish with basil or parsley, and serve hot.

Notes

  • For a lower-fat version, use half-and-half instead of heavy cream.
  • This soup pairs well with crusty bread or garlic toast.
  • You can also add cooked pasta or rice for a heartier meal.
