Instructions

  2. Combine Ingredients: In a large bowl, toss the bite-sized chicken pieces, sliced zucchinis, halved cherry tomatoes, thinly sliced red onion, and minced garlic with 2 tablespoons of olive oil and the Mediterranean seasonings – oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes – ensuring everything is evenly coated.
  3. Assemble the Bake: Spread the seasoned chicken and vegetable mixture evenly into the prepared baking dish, then sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
