Description

Mexican Pinwheels are colorful, flavorful tortilla roll-ups filled with a creamy blend of cream cheese, sour cream, taco seasoning, cheddar cheese, and fresh veggies. These no-cook appetizers are perfect for parties or casual gatherings, easy to prepare ahead, and served chilled or at room temperature.

  • 8 ounces cream cheese, softened

  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup finely chopped red bell pepper
  • ½ cup chopped green onions
  • ½ cup canned black beans, rinsed and drained
  • ¼ cup chopped fresh cilantro
  • 1 small jalapeño, finely diced (optional)

Wraps:

  • 4 large flour tortillas


Instructions

  1. Prepare the filling: In a medium bowl, mix together the softened cream cheese, sour cream, and taco seasoning until smooth and well combined. Stir in shredded cheddar cheese, red bell pepper, green onions, black beans, cilantro, and diced jalapeño, if using.
  2. Assemble the pinwheels: Lay out the flour tortillas flat on a clean surface. Evenly spread the cream cheese mixture over each tortilla, leaving a small border around the edges to help seal the roll.
  3. Roll and chill: Starting from one end, roll each tortilla tightly into a log shape. Wrap each log securely in plastic wrap. Place them in the refrigerator for at least 1 hour to chill and firm up.
  4. Slice and serve: After chilling, unwrap the logs and slice them into 1-inch thick pinwheels. Arrange on a serving platter and serve chilled or at room temperature.
